Split Pea Soup

I’m a big fan of soups. I make a pot at least weekly and we eat it for lunches and one other dinner before the pot runs dry. While Split Pea Soup isn’t in my weekly rotation, I made it the other day and loved it so I thought I’d share with you.

Ingredients

2 T olive oil
8 cups water
2 cups split peas
1 bay leaf
2 pieces kombu
about 1 lb (more or less is fine) of ham – bone in
1 onion – coarsely chopped
3 cloves garlic – finely chopped
4 carrots – finely chopped
3 small potatoes – finely chopped
2 teaspoons coarse sea salt
1 teaspoon dried sage
1 teaspoon dried thyme
dash of pepper
1 tablespoon soy sauce
2 tablespoons lemon juice
1 teaspoon cayenne pepper

Directions

Bring the first 6 ingredients to a boil and cook for one hour. Watch the pot carefully as it will boil over.
Remove the ham and allow it to cool. Shred the meat from the bone and return the meat to the pot.
Add the remaining ingredients and cook for 30 minutes more.
