Cashew Dips and Spreads

SAVORY
1 cup cashews - soaked for 2 hours, drained and pulsed in food processor
1 cup fresh herbs - whatever you have
1/4 cup water
2 T olive oil
2 T vinegar - I like white wine and you could also use lemon juice here
2 cloves of garlic
Pulse it all in a food processor or high powered blender.
Serve with crudités, on pasta or as the protein on salads!🥕🥦🥬

SWEET
1 cup cashews - soaked for 2 hours, drained and pulsed in food processor
1 T coconut oil
1-2 T maple syrup (you choose how sweet)
Splash of vanilla extract
Zest of one whole lemon
Pulse it all in a food processor or high powered blender.
Serve on pancakes, waffles, toast or even fresh fruit! 🧇🍑🍒
