ENERGY SUSTAINING BREAKFAST BARS

This recipe was inspired from a diet recipe for breakfast bars.  I took that recipe and turned it upside down, added fiber, protein, antioxidants and lots of healthy goodness.  These are incredibly easy to make and keep on hand for grab-and-go mornings.

INGREDIENTS

2 ½ cups old fashioned organic quick oats

½ cup ground flax seed

¼ cup organic dark cocoa powder (or slightly less)

½ teaspoon spirulina (a blue green algae powder, found in the supplements section)

½ cup honey

½ - 1 cup HOT water

½ cup natural peanut butter (sunflower seed butter makes these nut-free!)

INSTRUCTIONS

Stir together the dry ingredients and mix well.  Add in the honey and hot water and stir thoroughly.  Add in the peanut butter and turn until well blended.

Form into individual sized patties, like hamburger sliders.

Place in wax paper bags or plastic wrap and keep in the freezer or fridge.

Makes 10-12
