A 10 ounce package small seashell pasta – cooked and rinsed
1 small red bell pepper – diced
3 carrots – diced
4 green onions – diced
2 small yellow squash – diced
2 small cucumbers – diced
1 cup frozen corn – thawed
1 (15-oz) can black beans – rinsed
1/2 cup rice vinegar
1/4 cup olive oil
3 tablespoons Dijon mustard
1 tablespoon hot sauce
1/2 teaspoon salt
2 tablespoons fresh chives – chopped
2 tablespoons fresh oregano – chopped
OPTIONAL: 2 breasts chicken – cooked and cubed


Combine the pasta, vegetables, black beans and optional chicken in a large bowl.

In a smaller bowl, whisk together the vinegar and olive oil until combined. Whisk in the mustard, hot sauce, and spices.

Pour the dressing over the pasta and toss to coat.

Serve chilled over a bed of lettuce.
