Recipe of the Week: Potato Pancakes

This is a great side dish but it can also work as a complete meal, especially when served on a bed of greens with some applesauce or horseradish.

INGREDIENTS

4 or 5 potatoes - washed and grated

1 small onion - peeled and very finely diced

1 egg - whisked

1 tablespoon flour

1 ˝ teaspoons salt

˝ teaspoon pepper

2 tablespoons butter or canola oil

DIRECTIONS

After you've grated your potatoes, press them in a towel and drain any excess moisture.

Mix into the potatoes the remaining ingredients, except the butter or oil.  Add more flour if needed to form a batter-like consistency.

In a frying pan, heat the butter or oil.  Form small patties the size of your palm and lightly fry a few minutes on each side.
