6 cups peeled, cored and sliced organic apples (about three to four medium sized apples)
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon cloves
2 tablespoons organic brown sugar
Juice of 1/2 lemon
1 tablespoon cold butter
Crisp Topping
1/2 cup organic brown sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup organic whole or quick oats
1/4 cup organic whole wheat flour
1/4 cup un-sulfured coconut
1/4 cup chopped almonds (plus additional for garnish)
Dash of salt
2 tablespoons molasses
4 tablespoons butter


Preheat oven to 350 degrees.
In a small bowl mix together the brown sugar and spices. Pour the apples into a baking dish and drizzle them with the lemon juice. Stir in the spice mixture and toss until well coated.
Dot with cold butter
Mix together the crisp topping ingredients: brown sugar, spices, oats, flour, coconut, almonds and salt.
Cut in 4 tablespoons butter and molasses with a pastry blender or two knives, or pulse quickly and lightly in a food processor. You can also use your hands, just be careful not to knead this for too long or the butter will become soft and the topping will no longer resemble a crisp.
Spread over apples, sprinkle with additional nuts and bake 30-40 minutes until topping is crisp and apples are tender.
